I didn’t have AI taking over the planet and turning us vegan on my bingo card. Did you?

According to this press release, NotCo has received a patent to use artificial intelligence and learning algorithms to make plant-based products that match their animal-based counterparts. I am very interested in this not just for the taste of the products, but for any number of reasons related to health, the environment and the fact the company is from Chile. All goods things. NotCo is the maker of NotMilk, NotIceCream and NotBurger. I’m in love with their naming and overall aesthetic. Have you had any of them?

It actually makes a lot of sense that machine learning and AI would be used in this way. I’m curious the role of the human palette. Taste is taste but everyone’s taste is different. Kind of like the Malcom Gladwell Ted Talk about Prego.
